However from the system log we can see that sometimes windows firewall turns on and off, bound to the system trying to update the OS: we dont understand this behaviour. Would it be sufficient in such a scenario to disable automatic updates?

Or should I look at other potential causes for our problem? How can we stop notifications of insecure settings through which the customer might turn the firewall or the updates on again?
